Double chocolate cheesecake is usually a cheesecake that contains two different applications of chocolate. Typically, one of these uses is in the flavor of cheesecake. The second application can take several different forms. Cheesecake may contain chocolate chips or swirls. The crust can be made from chocolate graham crackers or contain cocoa powder. Many double chocolate cheesecakes are covered with some kind of ganache or chocolate sauce.

As a rule, double chocolate cheesecakes are almost always chocolate flavored. There are very few exceptions to this, usually because the name implies that the main part of the cheesecake contains either cocoa powder or chocolate-flavored cream cheese. For example, a plain cheesecake with a chocolate crust and chocolate chips in the cake slice is not usually called a double chocolate cheesecake. Chocolate should be the predominant flavor in the cheesecake.
The second application of chocolate in this dessert can vary a lot. Chocolate ribbons streaked across the cake are a popular choice because they offer layers of texture and added rich flavor. Cooks who choose this method often drizzle melted chocolate or fudge over the cheesecake mixture and gently fold it in with a rubber spatula or wooden spoon. Good quality dark chocolate generally works best because it doesn't add much sweetness and complements the slightly tangy cream cheese.
Other cooks may choose to use a second use of chocolate through some kind of coating. This can include bits of chocolate-covered pretzels, homemade chocolate ganache, or a layer of carefully arranged shaved chocolate curls on top of the dessert. Some may choose to hide the second chocolate application under the cake, or even in the crust. These cooks can use any of the above types of chocolate for that purpose.

Sometimes the name double chocolate cheesecake refers to two different types of chocolate rather than two applications. This can mean that the cheesecake is white chocolate flavored, and the crust and toppings are all dark or milk chocolate. A dark chocolate cheesecake can have white chocolate accents. This name can also be applied to desserts in which the second type of chocolate is infused with chili powder, orange zest, or mint.

In some cases, the term double chocolate cheesecake can mean that there is simply a double serving of chocolate in the cheesecake. This does not mean that there are chocolate chips or ribbons in the cheesecake. Instead, it indicates that the cook probably doubled the amount of cocoa powder in the recipe, making the cheesecake more chocolaty. This is the simplest, but possibly rarest, way to make a double chocolate cheesecake.

Before gently folding the melted chocolate or fudge into the cheesecake mixture with a rubber spatula or a wooden spoon, chefs typically apply this method by drizzling melted chocolate or fudge over the cheesecake play tic tac toe mixture. The best results are typically obtained by using dark chocolate of a high quality, as this variety of chocolate does not add a significant amount of additional sweetness and pairs nicely with the cream cheese that has a mild acidic flavor.
