Well, I recommend to start from some simple steps. Have you found any software for that yet? I would advise to check out this article https://hetmanrecovery.com/recovery_news/how-to-create-software-raid-5-with-lvm.htm where you will learn about how to recover deleted files. there is inbuilt support to support software RAID. As mentioned by Erich, it is there in the device mapper. if you would like to implement a new form of RAID than the existing RAID options (linear, striped, 0, 1, 10, RAID 5, RAID 6), you need to implement your own device mapper.

Also Look at FreeBSD ZFS filesystem RAID which they call RAID-Z. it works on different device sizes (as opposed to RAID you will see in Linux which is restricted to same sized storage media (disk/SSD).
